
1/4 Cup Margaritas

During last week's blizzard we were in desperate need of something to remind us that it WAS warm and sunny somewhere. That, and we had a boatload of those juicy limes from the Mexican grocery just taking up space in the crisper drawer of our fridge. Not to mention the fact that our upcoming vacation to Mexico just isn't coming fast enough. The only solution - 1/4 cup margaritas!
We owe this simple margarita recipe to Rick Bayless and his cookbook 'Mexican Kitchen - Capturing the Vibrant Flavors of a World-Class Cuisine.'
Here's the very basic recipe:
1/4 cup fresh lime juice
1/4 silver 100% agave tequila
1/4 cup orange liqueur
We like to add a little agave nectar too, just to sweeten them up - fresh lime juice can be pretty tart. Be warned - these pack a punch. Which we consider a good thing.
So let's mix some up!
Here's our cast of characters.
First, get out your lime squisher and commence to squishin' some limes.
For 2 margaritas you'll need 1/2 cup of lime juice (1/4 cup + 1/4 cup = 1/2 cup - I'm a mathematical genius). Then add 1/2 cup of tequila and 1/2 cup of orange liqueur to your shaker. Shake 'em up! Get out some of your best garage sale margarita glasses (25 cents a piece!) and lime and salt the rim.
Fill 'em up!
Put on some Jimmy Buffett and pretend your toes are in the sand. And it's hot. Enjoy.
You may want to have some salty snacks or toasted pepitas to add to the imaginary tropical ambiance. Thank goodness Grant had thought ahead and made some homemade tortillas so we could have this... Smothered Pork Burritos.
